Taco Salad Recipe

PhotobucketI eat taco salad fairly often. This is a great example of satisfying cravings with healthier options. I believe I was REALLY craving nachos when I decided to take all the ingredients I usually pile on chips and to put them on lettuce instead. Ta da, taco salad was born!

Ingredients include:

  • Ground turkey
  • Taco seasoning
  • Refried black beans
  • Chopped onion
  • Salsa
  • Greek yogurt
  • Shredded cheddar cheese
  • Black olives
  • Romaine lettuce
  • Tortilla chips (optional)
Cook up the ground turkey and add the taco seasoning. Heat the refried beans and add all ingredients to the lettuce. Serve warm. This salad doesn’t keep well, as the salsa and heat make the lettuce wilt, so only make as much as you plan to eat in one meal.
